Yellow squash and onion sauté is a perfect summer side.
Yellow squash is a vegetable I don’t cook very often and when I do it is usually in the form of squash dressing or less frequently fried squash. Both of those recipes are messy and labor intensive.
After picking up some yellow squash at the local farm stand I wanted a quick, and healthier alternative to my usual preparations when I remembered someone mentioned sautéing squash and adding basil. I know I like the combination of basil and corn so I decided to give the squash the same treatment. I also added some sliced onions and garlic because those are pretty much staples in my recipes.
The result was a quick and tasty side for many main dishes and a great way to use up the prolific veggie.

Yellow Squash and Onion Sauté
Ingredients
- 1 pound yellow squash , sliced in half moon shapes
- 1 medium onion , sliced
- 1 teaspoon dried basil
- 1 or 2 cloves garlic , minced
- 1 Tablespoon olive oil or butter
- To taste salt
- To taste pepper
Instructions

Heat oil or butter in a skillet over medium high heat.

Add the squash, onion, and garlic. Cook and stir for 10 minutes or until squash is as tender as desired and onions are slightly browned.

Season with the basil, salt, and pepper.

Serve immediately

Love this recipe! Such a quick and easy side dish and I love the use of basil! I am always looking for veggie recipes and in particular I do not have a lot of recipes using yellow squash, so I will be making this very soon. Pinning!
