Whole Wheat Pancake Mix

Ingredients

For the mix:

  • 6 cups whole wheat pastry flour
  • 1 1/2 teaspoons baking soda
  • 1 Tablespoon baking powder
  • 1 Tablespoon kosher salt
  • 4 Tablespoons sugar

For the pancakes:

  • 2 cups of the mix
  • 2 cups buttermilk
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 2 beaten eggs
  • Butter for the griddle

Instructions

  1. Place the mix in a large bowl
  2. Pour in the buttermilk, butter, vanilla, and eggs
  3. Whisk until combined
  4. Pour batter by the 1/4 cup on a hot buttered griddle or skillet
  5. Cook until bubbles set, flip and cook until golden
  6. Serve hot
