Italian Sausage and Bean Soup

  • 1 Tablespoon olive oil
  • 1 medium onion diced
  • 1 large carrot diced
  • 3 cloves garlic minced
  • 10 ounces Italian Sausage
  • 8 ounces tomato sauce
  • 2-3 15 ounce cans Great Northern or Cannelini beans drained and rinsed
  • 4-6 cups chicken broth
  • 2 teaspoons Italian Seasoning
  • 1 cup dry elbow macaroni
  • 1/2 cup grated Parmesan cheese


  1. Heat a large Dutch oven or pot over moderate heat

  2. Drizzle the oil in the pot

  3. Add the onion and carrots and cook for 3-5 minutes or until the onion is translucent and softened

  4. Add the sausage to the pot and break into crumbles with a wooden spoon. Add the garlic to the sausage, onion, and carrots

  5. Cook for 5-6 minutes or until the sausage is browned and cooked through

  6. Next add in the tomato sauce, beans, Italian seasoning, and four cups of chicken broth and bring to a boil

  7. Add the elbow macaroni and cook until tender. Add in the remaining 2 cups of broth if desired

  8. Stir in the Parmesan cheese and serve
