Peanut Butterscotch No-Bake Cookies

Ingredients

  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1/4 cup butter
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup peanut butter
  • 3 cups quick cooking oatmeal

Instructions

  1. Place waxed paper or foil on cookie sheets

  2. Place the sugars, butter, and milk in a heavy saucepan

  3. Place over medium heat and bring to a rolling boil (bubbles stay even when stirred)

  4. Boil for one minute, stirring constantly

  5. Remove from heat and add vanilla and peanut butter. Stir until the peanut butter has melted

  6. Stir in the oats

  7. Quickly drop cookies by the tablespoon onto the prepared cookie sheets.
