Easy Slow Cooker Italian Vegetable Soup

Ingredients

  • 24-32 ounces frozen mixed vegetables
  • 1/2 cup minced onion or 2 Tablespoons dried minced onion
  • 4 cloves minced or pressed garlic
  • 2 quarts vegetable broth or stock
  • 15-16 ounces tomato sauce
  • 1 teaspoon dried basil
  • to taste salt
  • to taste pepper
  • 1 1/2 cups orzo or ditalini

Instructions

  1. Place all ingredients except the orzo or ditalini in a 6-quart or larger slow cooker and stir

  2. Cover and cook on low for 6-8 hours

  3. Add the orzo or ditalini to the slow cooker 30 minutes before serving

  4. Serve hot with bread or rolls
