Easy Chicken Quesadillas

  • 8 soft taco sized flour tortillas
  • 2 cups pressure cooker spicy shredded chicken
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 2 teaspoons paprika
  • 2 teaspoons chili powder
  • to taste salt
  • 2 cups shredded cheese I used a Mexican four cheese blend


  1. Heat a large skillet or griddle over moderate heat

  2. Season the pressure cooker spicy shredded chicken with the garlic powder, cumin, paprika, chili powder, and salt

  3. Divide the chicken and cheese among the flour tortillas

  4. Fold over and cook for two to three minutes per side or until cheese has melted and chicken is heated

  5. Repeat until all quesadillas are cooked
