Peanut Butterscotch Pie

Ingredients

  • 1 1/2 cups packed light brown sugar
  • 6 Tablespoons flour
  • 1 1/2 cups milk
  • 2 egg yolks , slightly beaten
  • 4 Tablespoons peanut butter
  • 1/2 teaspoon vanilla
  • 1 graham cracker crust or ,
  • 1 single layer pie crust baked and cooled

Instructions

  1. Mix sugar and flour in heavy sauce pan. Slowly add milk and cook over low heat stirring frequently until thickened.
  2. Add egg yolks and cook three minutes longer.
  3. Remove from heat and add peanut butter and vanilla. Cool slightly and pour in to prepared crust.Chill before serving.
  4. I like to top it with (a lot of) whipped cream.
