Turn oven to 350 degrees. In a large bowl beat sugar, shortening, and peanut butter until fluffy. Add the vanilla and eggs and mix until blended. Add both flours stirring with spoon until just combined. Stir in oats.
Drop dough by rounded tablespoons on to ungreased cookie sheets and bake 10 to 14 minutes or until lightly browned. Cool a couple of minutes then remove from sheets to finish cooling.
