Squash Casserole

Ingredients

  • 2 cups cooked and mashed yellow squash I usually use 2 large or 4 small squash sliced. I place in a saucepan cover with about a cup of water and simmer until tender then drain and mash
  • 2 cups round buttery cracker crumbs
  • 1 cup evaporated milk
  • 1 cup shredded cheddar cheese
  • 1 cup chopped onion
  • 2 eggs lightly beaten
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • pinch of sugar
  • 6 tablespoons butter melted and cooled

Instructions

  1. Preheat oven to 350 degrees
  2. Spray or butter a 1-quart baking dish

  3. In a large bowl mix together the squash, cracker crumbs, milk, cheese, and onion
  4. Add the eggs, salt, pepper, sugar, and butter and mix well

  5. Pour into the prepared baking dish
  6. Bake for 35 to 40 minutes or until bubbly and golden
