Kielbasa, Penne, and Vegetables in Cheddar Sauce

  • 8 ounces dried penne
  • 1 pound kielbasa , sliced
  • 1 Tablespoon butter
  • 2 cloves garlic , minced
  • 1/2 medium red onion , sliced
  • 1-2 carrots , diced
  • 6 ounce can mushrooms
  • 1 heaping Tablespoon cornstarch
  • 1 1/2 cups milk
  • 1 cup frozen peas
  • 1 cup shredded Cheddar cheese
  • To taste salt
  • To taste black pepper


  1. Cook penne according to directions on box. Drain and set aside.
  2. Melt butter in a large skillet over moderate heat. Add the kielbasa, mushrooms, onions, garlic, and carrots. Cook until the sausage is browned and carrots are as tender as desired.
  3. Whisk together the milk and cornstarch and pour into the kielbasa and vegetable mixture. Gently stir and cook until thickened slightly.
  4. Stir in the drained pasta, peas, and cheese. Cook for 3-5 minutes or until the cheese has melted and peas have heated through.
