Grilled Vegetable Pasta Salad #SundaySupper

Ingredients

  • 2 to 3 cups sliced vegetables I used mushrooms and red onion. Bell peppers , yellow squash and zucchini would be fabulous too
  • Olive oil
  • 7 ounces short cut pasta , cooked and drained
  • 1/4 to 1/2 cup vegetable oil
  • 1 to 2 Tablespoons Ranch dressing mix
  • 1/4 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Heat grill to moderate heat
  2. Brush vegetables with olive oil and grill until tender
  3. In a large bowl mix together the vegetables, pasta and cheese
  4. In a small bowl mix 1/4 cup of the oil and 1 Tablespoon of the ranch dressing mix
  5. Drizzle the pasta and veggies and toss to coat
  6. Add the other oil and dressing mix if needed
  7. Season to taste with salt and pepper
