Mushroom and Parmesan Orzo

  • 3/4 cup dry orzo
  • 1 1/2 Tablespoons butter
  • 2/3 diced onion
  • 2 minced garlic cloves
  • 8 ounces mushrooms sliced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 Cup vegetable broth or stock
  • 1 Tablespoon balsamic vinegar
  • 6 Tablespoons shredded Parmesan cheese


  1. Cook orzo according to package directions Drain and set aside
  2. Melt the butter in a large skillet over medium heat. Once melted cook for an additional minute or two to let it brown slightly.
  3. Add the onion, garlic, and mushrooms. Sprinkle with salt and pepper.
  4. Cook for 5 minutes or until the onions become translucent and the mushrooms have softened.
  5. Add the balsamic vinegar and vegetable stock.
  6. Stir in the orzo and sprinkle with Parmesan cheese
