Lemon Poppy Seed Muffins

Ingredients

  • 2 1/2 cups all purpose flour
  • 1 cup white whole wheat flour
  • 1 cup sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 Tablespoons poppy seeds
  • zest of 1 lemon
  • 1 Tablespoon lemon juice
  • 1 1/2 cups buttermilk
  • 1/2 cup oil
  • 2 eggs beaten

For the optional glaze:

  • 1 cup powdered sugar
  • 1-2 Tablespoons lemon juice

Instructions

  1. Preheat oven to 350 degrees. Grease or line 18 muffin cups.
  2. Mix together the flours, sugar, baking soda, baking powder, salt, lemon zest, and poppy seeds.
  3. In another bowl mix together buttermilk, eggs, oil, and 1 Tablespoon lemon juice.
  4. Pour wet ingredients into the flour mixture and stir until combined. Some lumps should remain but there should be no dry streaks.
  5. Pour quarter cupfuls of batter into the prepare muffin tins.
  6. Bake for 25-35 minutes.
  7. Cool and glaze if desired.

To make the glaze:

  1. In a small bowl whisk together the powdered sugar and enough lemon juice to make the glaze your desired consistency.
  2. Drizzle muffins with glaze.
