Easy Gnocchi

  • 1 cup Instant mashed potato flakes
  • 1 cup boiling water
  • 1 egg lightly beaten
  • 1 1/2 cups all purpose flour
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper


  1. Place potato flakes in a large bowl. Pour water over flakes and stir.
  2. Mix in the egg, flour and seasonings. Knead on a lightly floured surface until a soft dough forms.
  3. Divide in half and roll each half into a 1/2 inch thick log. Cut into 3/4 inch pieces.
  4. Roll each piece on a lightly floured fork to make the grooves.
  5. Cook in salted boiling water until the gnocchi floats. Remove with slotted spoon and use as desired.

Freezing directions:

  1. Once you’ve made the grooves in the gnocchi, place on a cookie sheet and freeze for 30 minutes. Place in labeled freezer bag.
  2. When ready to use continue as directed above.
