Pina Colada Cream Pie #SundaySupper

Ingredients

  • 1/2 cup sugar
  • 1/3 cup all purpose flour
  • 1 1/2 cups milk
  • 1/2 cup butter
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1 teaspoon rum flavoring
  • 3 egg yolks
  • 1 1/2 cup shredded coconut
  • 20 ounce can crushed pineapple in juice drained
  • 1 cup heavy cream
  • 3 Tablespoons powdered sugar
  • 1 9 inch pie shell baked and cooled
  • Extra coconut for garnish optional
  • Maraschino cherries for garnish optional

Instructions

  1. Whisk together flour, sugar and salt in a heavy bottomed sauce pan.
  2. Add the milk, egg yolks and butter.
  3. Cook over medium heat whisking constantly until the mixture has come to a bubble and has thickened enough to coat the back of a spoon.
  4. Press through a fine mesh sieve to remove any lumps
  5. Stir in the rum flavoring, vanilla, coconut, and pineapple
  6. Pour into pie shell and chill
  7. When pie is cold whip the cream and powdered sugar until stiff peaks form
  8. Spread on pie
  9. Garnish with coconut and maraschino cherries if desired
