Barbecue Chicken Quesadillas #SRCBacktoSchool

  • 4 soft taco or fajita size flour tortillas
  • 4 Tablespoons barbecue sauce
  • 4 Tablespoons diced red onion
  • 4 Tablespoons chopped cilantro
  • 2 cups chopped cooked chicken
  • 1 cup shredded sharp cheddar cheese


  1. Heat a griddle or skillet over moderate heat
  2. Spread each tortilla with 1 Tablespoon barbecue sauce
  3. Sprinkle one side of each tortilla with 1/4 of the onion, cilantro, chicken, and cheese
  4. Place on the griddle or skillet
  5. Fold empty side over when pliable
  6. Cook for 3 to 5 minutes per side or until golden and cheese is melted
