Sour Cream and Chive Mashed Potatoes #SundaySupper

Ingredients

  • 2 to 2 1/2 pounds potatoes
  • 1/4 cup butter
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/4 cup minced fresh or 1 heaping Tablespoon dried chives
  • Salt to taste

Instructions

  1. Peel potatoes if desired and cube
  2. Place in a large pot of salted water
  3. Cover and bring to a boil
  4. Reduce heat and cook for 15 to 20 minutes or until fork tender
  5. Drain and return to pot
  6. Add the butter and sour cream and mash
  7. Pour in the milk and mash until creamy
  8. Stir in the chives
  9. Season with salt if needed
