I love pie. Seriously, cakes are good and I  probably wouldn’t turn down a brownie or a peanut butter cookie but pies are sublime. Given the choice between pie and cake, I will choose pie 95% of the time.

A good pie starts with a good crust. Cookie crumb crusts are a fabulous choice for the pastry-impaired. Graham cracker is the classic choice but I’m not a huge fan. Vanilla Wafer Cookie Crumb Pie Crust makes everyone in my house happy.

I had planned on sharing this a few months ago but summer was crazy and I didn’t make a pie at all. When it came time to start Thanksgiving recipes I knew this had to be one.

This pie crust is easy to make. All you need are three ingredients and a few minutes. You can bake the crust or chill it for a no-bake pie.

Vanilla Wafer Cookie Crumb Pie Crust

Ingredients

For the crust

  • 55 vanilla wafers crushed
  • 1/4 cup sugar
  • 8 Tablespoons butter melted

For the edge

  • 20 whole vanilla wafers

Instructions

  1. Crush the wafers using a food processor, blender or a zip-top bag and a rolling pin

  2. Place the crumbs in a 9 inch deep dish pie plate or tin

  3. Add the sugar and butter and mix well

  4. Press the buttered crumbs across the bottom and up the sides of the pie dish

  5. Press the whole wafers around the egg

For baked crust

  1. Bake at 375 degrees for 10-12 minutes or until lightly browned. Let cool before using

No Bake Instructions

  1. Place in the refrigerator for an hour or until the crust is set
