Tuna Patties

Tuna patties are one of those things I like I just never really think of making them. Seriously I can probably count on one hand how many times I’ve ever made them. I had a major craving for them on Sunday so I whipped up a batch.

These would be fabulous served on buns with tartar sauce, lettuce, tomato, and onion for a tuna burger, or even on some sandwich bread with a thin layer of mayo.

Ingredients

  • 2 5 ounce cans drained tuna
  • 1/2 large or 1 small chopped onion
  • 2 eggs
  • 1/2-1 cup breadcrumbs
  • To taste salt
  • To taste black pepper
  • 2-4 tablespoons oil or butter

Instructions

  1. Heat oil or butter in large skillet over medium heat. Crack eggs into a mixing bowl. Add breadcrumbs, salt and pepper.
  2. Add the tuna and onions to breadcrumb mixture and combine. Form and cook a small test patty to check seasoning level if desired. If needed add more seasonings or breadcrumbs. Form tuna into patties and cook until golden on each side and heated through.
