A very poorly iced bunny tea cake

Last night my nephew and I made Southern Plate’s Southern Tea Cakes recipe and I have to tell y’all it is an idiot proof recipe if I can make it. I have never been able to get a cookie dough to roll out before this one. It was my nephew’s first time making cookies and he had a blast using all the cutters. We made hearts, bunnies, ducks, footballs, football helmets, airplanes, trucks and more. He wanted all 101 of them but this doesn’t make that much dough.

Soft tea cakes with a powdered sugar icing.

Prep time: 15 minutes

Cook time: 10 minutes

Total time: 25 minutes


For the tea cakes:

  • 1 cup butter or margarine, softened
  • 1 cup white sugar
  • 3 eggs
  • 3 1/2 cups self rising flour
  • 1 teaspoon vanilla

For the icing:

  • 2 Tablespoons butter or margarine, softened
  • 1/2 cup powdered sugar
  • 2 Tablespoons milk
  • 1 teaspoon vanilla
  • icing colors

Cooking Directions

For the tea cake:

Preheat oven to 350.

Beat the butter and sugar together until light and fluffy. Add the eggs, one at a time, beating well between additions. Stir in the vanilla and flour and mix until the dough just comes together.

Roll out, fairly thin, on a floured surface. Cut as desired. Bake on ungreased cookie sheet for 10 minutes. The cookie will still be pale.

Sprinkle with sugar while warm or cool and frost.

    For icing:

    In a bowl mix together the powdered sugar and butter. Stir in milk a little at a time until a spreadable consistency is reached. Add vanilla and icing color(s) if desired
