Chicken Pot Pie is one of my all time favorite foods. Seriously, if someone said you can only eat five things for the rest of your life chicken pot pie would be on the list.

The problem with homemade chicken pot pie is it can be labor intensive. I made a few time saving short cuts with this recipe but still managed to make a delicious and 98% from scratch dish. I did use store bought tots because homemade tots aren’t even near my make at home list.

One of the keys to making quick work of the dish is to have it a couple of days after you’ve had roasted chicken or another chicken recipe that calls for cooked chicken. Just toss a bit more chicken on the sheet pan, in the slow cooker, or how ever you cook chicken for recipes.

  • 4 Tablespoons butter
  • 1 cup frozen seasoning blend OR a mix of diced onion, bell pepper, and celery
  • 1 pinch salt
  • 1/2 teaspoon garlic powder
  • 4 Tablespoon all purpose flour
  • 2-3 cups chicken broth
  • 1 cup milk
  • 1/4 teaspoon celery salt
  • 1/2 teaspoon dried thyme
  • 12 ounce bag frozen mixed vegetables
  • 3-4 cups cooked chopped chicken
  • 1 bag tater tots


  1. Preheat oven to 425 degrees

  2. Melt butter in a large skillet over moderate heat

  3. Add the seasoning mix, salt, and garlic powder and cook for 3 to 5 minutes or until softened

  4. Sprinkle the vegetables in the skillet with flour and cook for 2 minutes 

  5. Whisk the broth and milk into the flour mixture

  6. Add the bag of frozen mixed vegetables to the skillet and cook the sauce and vegetables until the sauce has thickened

  7. Stir in the cooked chicken and transfer contents of skillet to 2 to 3-quart baking dish

  8. Top with tater tots and bake for 20 to 25 minutes or until the tots are golden and the filling is bubbly

  9. Let the casserole rest for 10 minutes before serving
