Sweet and Smoky Chicken

Dry rubs are a great way to make chicken a little less boring when you don’t have time to marinate. You can buy some good blends at the store but they aren’t always the most cost effective especially if you don’t use them very often. To fit into our Frugal Flavors theme I came up with my own version of a rub I found at the grocery store.

Sweet and Smoky Chicken:

  • 4 boneless, skinless chicken breasts, pounded to an even thickness
  • vegetable oil
For the rub:
  • 2 1/2Tablespoons brown sugar
  • 1 1/2- 2 Tablespoons Chili powder
  • 1 1/2-2 Tablespoons Paprika. smoked if you have it on hand for an extra smoky flavor
  • 1 teaspoon each onion and garlic powders
  • 1 teaspoon Kosher salt
  • 1/4-1/2 teaspoon black pepper
For the rub:

Mix all ingredients together in a bowl, store in an air tight container for several weeks.

Heat cast iron skillet or grill pan over medium heat until hot. Sprinkle chicken breasts evenly with 1-2 tablespoons of spice mixture on both sides. Drizzle lightly with oil. Cook in hot skillet for about 6 minutes per side or until chicken is browned and cooked to 165  degrees. Be careful not to burn the chicken on the outside due to the sugar. You can also cook this on a medium-medium high grill for about the same time given for a skillet.
