One of the advantages of monthly meal planning is it gets me a bit more creative with what we eat within our themes. Tuesdays are Taco Tuesday here which means we eat some sort of Mexican, Tex-Mex or Cal-Mex type food.

I had originally planned enchiladas for the second Tuesday in May slot but Mama mentioned smothered burritos and those sounded even better.

I already have a recipe for Taco Bell Inspired Smothered Beef Burritos made with shredded beef. While those are super yummy they take a bit longer and can be a bit pricey depending on whether or not you can find stew beef or chuck roast on sale.

Smothered Ground Beef Burritos are easy and pretty inexpensive. The night we ate these for dinner it was almost like eating at our favorite Mexican restaurant.

Smothered Ground Beef Burrito with Cilantro Lime Rice, Refried Beans, Pico de Gallo, and Sour Cream

Smothered Ground Beef Burritos

Ingredients

  • 1 1/4 pound ground beef
  • 1 packet taco seasonings or 2 Tablespoons Homemade Taco Seasoning
  • 1/3 cup water
  • 2 cups shredded cheese
  • 4-6 burrito sized flour tortillas
  • 28 ounce can red enchilada sauce

Instructions

  1. Preheat oven to 350 degrees

  2. Spray rectangle baking dish with non stick cooking spray and set aside

  3. Brown ground beef in a large skillet over medium heat until done

  4. Sprinkle with taco seasoning mix, add water and simmer for 5 minutes

  5. Turn off the beef and add one cup of the shredded cheese

  6. Warm tortillas, add the beef and cheese and wrap to close

  7. Place rolled burritos in the prepared casserole dish

  8. Pour the enchilada sauce over the burritos and sprinkle with remaining cheese

  9. Bake in the hot oven for 15-20 minutes or until the sauce is bubbly and the cheese has melted

    Its funny that you just posted this….I just created my own version of this smothered burritos last week. Inside my burritos, I added cooked boxed beans and yellow rice as well as refried beans and some (raw) onion. I then added shredded chicken inside that I had pre-baked with a chili powder rub. In addition, I put shredded pre-packaged Mexican style cheese inside as well as some of the enchilada sauce. Outside, I put more cheese and enchilada sauce as well as some sliced avocado, cojita cheese and sour cream once baked. It was so good. I even froze some individually so I could pop them into the toaster oven later.
