Slow Cooker Ground Beef Stroganoff

Slow Cooker Ground Beef Stroganoff is a family favorite. Ground beef simmers all day in a savory mushroom sauce before being finished with sour cream and added to cooked egg noodles.

Beef Stroganoff was one of my absolute favorite meals growing up. And my niece and nephews feel the same. My oldest nephew who doesn’t like mushrooms or sour cream literally cheers when he hears I’m making slow cooker ground beef stroganoff.

If that’s not a ringing endorsement I don’t know what is.

This a perfect meal for those days when you have more time earlier in the day to cook than closer to dinner time. You do all the chopping and browning of meat early in the day. Then all you have to do is thicken the sauce, add sour cream, and egg noodles in the evening.

Slow Cooker Ground Beef Stroganoff

  • 1 pound ground beef
  • 8 ounces button mushrooms sliced or chopped
  • 1/2 cup diced onion
  • 1/2 teaspoon garlic powder
  • pinch salt
  • pinch black pepper
  • 2 cups low sodium beef broth
  • 1 teaspoon dried thyme
  • 1/4 cup cornstarch
  • 1 cup milk
  • 1/2 to 3/4 cup sour cream
  • 12-16 ounces egg noodles, prepared according to package


  1. Cook the ground beef in a large skillet over medium heat until the beef starts to brown

  2. Add the mushrooms, diced onion, and garlic powder and cook until mushrooms are tender and onion is translucent

  3. Pour into the liner of a 4 quart or larger slow cooker

  4. Season the beef with salt and pepper and the thyme

  5. Pour the beef broth over the beef 

  6. Cover and cook on high for 2-4 hours or on low 6-8

  7. About 20 minutes before you are ready to eat cook the egg noodles according to package directions

  8. While the noodles are cooking whisk together the cornstarch and milk. Pour into the slow cooker and mix well until thickened which should only take a minute or so if the sauce is bubbling

  9. Stir in the sour cream until no streaks of white remain

  10. Add noodles and mix to coat with sauce.  Season to taste with salt and pepper Serve and enjoy
