Slow Cooker Sloppy Joes

Slow Cooker Sloppy Joes are easy and delicious.

Sloppy Joes are one of my favorite feed a crowd dishes and are also a great make-ahead meal. I tweaked this recipe from a cookbook, I think, to fit my family’s taste and even former sloppy Joe haters had no problems devouring their dinners.

We’ve never been big fans of the canned sloppy Joes sauces and I was pleased to find a recipe that uses items I pretty much always have on hand. Another really awesome thing about this recipe is it’s freezer friendly. Instead of making enough sloppy Joes for one meal you can double or triple it depending on the size of your slow cooker and freeze meal-sized portions.

This would be a great weeknight meal because if you need it to it can cook on low all day. Serve with oven fries or chips and fruit and you’ve got an easy meal that takes almost no time at all.

You can also use the filling to stuff potatoes or even make sandwich pockets. In a pinch, it’s even good over hot cooked rice.

Slow Cooker Sloppy Joes

Ingredients

  • 1 1/2 pounds lean ground beef
  • 1 small or medium onion , chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups ketchup
  • 1/4 cup water
  • 2 teaspoons yellow mustard
  • 2 Tablespoons packed brown sugar

Instructions

  1. Brown meat in large skillet add onion and cook until translucent and soft. Season with salt and pepper and drain off any fat.
  2. Place in slow cooker. Add water and ketchup. Add mustard, sugar and onion powder if using. Stir to combine. Cover and cook on low 4-5 hours or on high 2-3 hours.

Freezer instructions: Cool completely in refrigerator. Label container and freeze. When ready to use thaw in fridge overnight or until thawed. Heat in skillet over low heat until heated through and bubbly. Serve.
