Pressure Cooker Spicy Shredded Chicken

When I find a technique or a base recipe that my family really likes I try to expand on it in as many ways possible. This is one of those recipes. If you look through my recipe index you’ll see that I have a recipe for Slow Cooker Spicy Shredded Beef and Shredded Pork Burritos. This recipe is just the chicken version of those dishes.

Don’t let the spicy in the title worry you. Unless you use the hot version of the canned diced tomatoes with green chiles or are super sensitive to heat the meat isn’t spicy at all. Even the preschooler nephew had no problems with the chicken.

Use the finished meat in tacos, burritos, enchiladas, chimichangas, or even on salads. A Southwestern style salad with greens, black beans, corn, and salsa would be delicious with the chicken.

This recipe makes about three pounds of chicken so it’s perfect for batch cooking and freezing for later. This is how I do my freezer cooking nowadays instead of the marathon cooking sessions.

Pressure Cooker Spicy Shredded Chicken

This easy Pressure Cooker Spicy Shredded Chicken can be used in a variety of recipes.

Ingredients

  • 3 pounds boneless skinless chicken breasts or thighs
  • 1 medium onion, sliced or chopped
  • 1/2 cup chicken broth
  • 10 ounce can diced tomatoes and green chiles

Instructions

  1. Place the chicken and onion  in the bowl of an electric pressure cooker

  2. Pour the broth and tomatoes and chiles over top

  3. Place lid on pressure cooker, set to seal, and cook for 20 minutes on manual high pressure

  4. When cook time is up, let it do a natural pressure release, aka leave it alone, for 20 minutes then turn valve to release any residual pressure

  5. Shred the chicken using two forks and use as desired

Instructions for Freezing

  1. Quickly cool the chicken and divide into two and four cup portions

  2. Freeze in labeled freezer bags or containers until needed

  3. When ready to use, thaw overnight in refrigerator and use as needed
