Potato Topped Taco Skillet Pie is a mix taco filling and shepherds pie. Savory beef and corn are topped with delicious creamy mashed potatoes.

Sometimes I can be clueless about what I’m cooking for dinner. Even with menu planning there are nights when there are not leftovers like I had planned or something has thrown a wrench into dinner plans.

This recipe came from one of those nights. I had originally planned to make a pot pie but the oven decided it didn’t want to light.

So I rummaged around in the freezer and cupboards to see what I could make. I found taco seasoning and salsa to go with the onion, corn and potatoes that would have been in the pot pie. I just wished I had some cheese to go in or on the potatoes because that would have tasted delicious. But it was a day when I could not get to the store and had to make do with what I had on hand.

The results ended up being easy and delicious. Even the toddler auntling gobbled his serving with no complaints.

Potato Topped Taco Skillet Pie

Peel the potatoes and slice or cube

Cook in salted boiling water until tender

While the potatoes are cooking brown the ground beef

Add in the onion and cook until tender and translucent

Sprinkle with the taco seasoning mix, pour the water and the salsa in and stir well

Add in the corn, bring to a boil, reduce heat and simmer for 15 minutes

Drain and mash the potatoes with the sour cream and milk

Season the potatoes with salt if needed

Spread potatoes over the simmering beef

Serve hot


Keep dinner simple and serve with a green salad and Alabama Sweet Tea

For the beef mixture:

  • 1 pound lean ground beef
  • 1 cup diced onion
  • 2 Tablespoons Taco seasoning mix
  • 2/3 cup water
  • 2/3 cup salsa
  • 1 cup frozen corn
  • To taste salt

For the potatoes:

  • 4-5 medium potatoes peeled and cubed or sliced
  • 2 Tablespoons sour cream
  • Salt to taste
  • 1/4 to 1/2 cup milk


  1. For the beef:Brown the beef in a large skillet over medium heat
  2. Add in the onion and cook for 5 minutes or until onion is tender and translucent
  3. Season with taco seasoning and then add the water, salsa, and corn
  4. Bring to a boil, reduce heat and simmer for 15 minutes
  5. Place dollops of mashed potatoes over the top of the beef and spread in an even layer

For the potatoes:

  1. Place the potatoes in salted water and boil until tender
  2. Drain and return to saucepan
  3. Add the sour cream and 1/4 cup of milk to the potatoes and mash until smooth adding the other 1/4 cup milk and more salt if needed
  4. Keep warm if needed
