Peanut Butterscotch No-Bake Cookies

This delectable bite combines two of my favorite treats: Peanut Butterscotch Pie and No-Bake Cookies. I had a craving for something sweet the other day and knew I wanted something quick and easy. I absolutely adore the traditional no-bake oatmeal cookies but I wanted to try something a little different than the usual.

Inspiration struck in the form of my second favorite pie. I replaced half of the white sugar in the recipe with packed light brown sugar. I was delighted with the resulting flavors. As a warning, I did boil the mixture a but too long because I was busy taking pictures for Instagram. (By the way if you don’t follow me there already I would be delighted to have you. If you do, thank you so much!!!!!) My cookies were a bit drier and crumblier than they should be.

Peanut Butterscotch No-Bake Cookies

  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1/4 cup butter
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup peanut butter
  • 3 cups quick cooking oatmeal


  1. Place waxed paper or foil on cookie sheets

  2. Place the sugars, butter, and milk in a heavy saucepan

  3. Place over medium heat and bring to a rolling boil (bubbles stay even when stirred)

  4. Boil for one minute, stirring constantly

  5. Remove from heat and add vanilla and peanut butter. Stir until the peanut butter has melted

  6. Stir in the oats

  7. Quickly drop cookies by the tablespoon onto the prepared cookie sheets.
