Peanut Butter Oatmeal Cookies

Peanut Butter Oatmeal Cookies are soft and delicious. Great with a cold glass of milk or coffee or tea.

Homemade peanut butter oatmeal cookies are a great after school or after dinner treat.

Welcome to Kid friendly foods week here on Cookin’ Mimi. It’s back to school time for most of the US and the first recipe would be perfect to tuck in to lunch boxes if your school isn’t nut free or as an after school snack.

I love cookies. Two of my favorites are oatmeal and peanut butter and this recipe combines the two in a very easy and delicious recipe. And as a bonus it does incorporate whole wheat flour so it’s a bit healthier than some other cookie recipes.

This recipe for peanut butter oatmeal cookies would also be fabulous made ahead and frozen either as the raw dough or baked cookies. To freeze the unbaked cookie dough place the dough on parchment lined cookie sheets and freeze for about twenty minutes. Remove the balls of dough to labeled freezer bags or con taints and then pull as many needed to bake when the cookie craving hits.

Ingredients

  • 1 3/4 cups packed brown sugar
  • 1/2 cup shortening
  • 1/2 cup peanut butter
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 cup self rising flour
  • 1 cup whole wheat flour
  • 3 cups old fashioned oats

Instructions

  1. Turn oven to 350 degrees. In a large bowl beat sugar, shortening, and peanut butter until fluffy. Add the vanilla and eggs and mix until blended. Add both flours stirring with spoon until just combined. Stir in oats.
  2. Drop dough by rounded tablespoons on to ungreased cookie sheets and bake 10 to 14 minutes or until lightly browned. Cool a couple of minutes then remove from sheets to finish cooling.
