This may not look like much but it’s so good. If you like beef stroganoff you will probably like this meatless version.

I’m trying to incorporate meatless meals into our diet that aren’t Mexican or baked potato and salad. They are yummy but a constant rotation of three or four recipes all the time gets a bit boring.

I love beef stroganoff so much that I have several different versions on the blog already. There are potatoes stroganoff, slow cooker ground beef stroganoff, meatballs stroganoff, and ground beef stroganoff.

I told you. I figured a meatless version would be delicious too and I was correct.

I used vegetable broth instead of beef to keep it vegetarian but you could use beef if you’d like.

Mushroom Stroganoff

Ingredients

  • 2 Tablespoons oil or butter
  • 1 medium onion diced
  • 6 cloves garlic minced
  • 8 ounces white button mushrooms sliced
  • 1 teaspoon dried thyme
  • To taste black pepper
  • To taste salt
  • 8 ounces egg noodles
  • 4 cups vegetable broth
  • 1/2 cup milk
  • 1/4 cup all-purpose flour
  • 1 cup sour cream

Instructions

  1. Heat butter or oil over moderate heat in a large skillet with a lid

  2. Add the onion, garlic, mushrooms, thyme, salt, and pepper

  3. Cook until the mushrooms and onion are tender

  4. Add the egg noodles and broth and stir well

  5. Bring to a boil, cover, and reduce heat

  6. Simmer for 15 minutes or until the noodles are tender and broth is mostly absorbed

  7. Whisk the milk and flour together and pour over noodles

  8. Stir well and cook for 2-3 minutes or until the sauce has thickened

  9. Add sour cream and warm gently

  10. Season to taste with additional salt and pepper
