Mixed Bean and Bacon Soup

As I have mentioned before beans are a staple in our diet and I am always looking for new ways to cook them. I was excited to see the Bean and Bacon Soup posted at Eat at Home. I almost never have canned beans on hand for some reason but you can pretty much always find bags of dried pintos and Great Northern beans in the cupboard. I did what I do best and adapted. This is now one of my favorite ways to eat beans.

Mixed Bean and Bacon Soup {adapted from Eat at Home}

Ingredients:

  • 1 pound mixed Great Northern and Pinto Beans. You can buy them already mixed or mix a heaping cup of Pintos and a heaping cup of Great Northerns together
  • 3 slices of bacon, chopped
  • 1 onion, diced
  • 6 cups of chicken broth
  • 1 14 ounce can of diced tomatoes, undrained
  • 1/2 teaspoon of garlic powder
  • salt and pepper to taste

Directions:

Sort through beans making sure there are no twigs, rocks and the like. Place beans in a pot or bowl with lid. Cover with water and let soak overnight. Drain beans.

In a pot or Dutch oven fry bacon over medium heat until browned and crisp. Remove with a slotted spoon to paper towels and refrigerate.  Put the onions in the bacon fat and sauté until tender.

Add drained beans, chicken broth, diced tomatoes and garlic powder. Bring to a boil, cover and reduce heat and simmer for about two hours or until the beans are tender. Check  occasionally to see if you need to add more chicken broth or water.

Fifteen minutes or so before serving time add the reserved bacon from the fridge and cook until bacon is hot. Season with salt and pepper if needed.

edit: I forgot to say when you were supposed to add the diced tomatoes in the printable recipe. It’s fixed in the post but not on the PDF. I’ll add that in and upload the new file but if you’ve already printed just add a note to add the tomatoes with the beans, garlic powder and chicken broth. Thanks
