this should be the last of the filler recipes, I have my camera and will be posting new recipes with photos tomorrow. I hope to do at least three per week.

Lemon Surprise

A creamy dessert with cream cheese and lemon. Perfect for summer.

Prep time: 20 minutes

Cook time: 15minutes

Total time: 40 minutes plus chilling

Ingredients

  • 1 cup all purpose flour
  • 1/2 cup (1 stick) butter, melted
  • 1 1/2 cups nuts, divided. I used walnuts
  • 8 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 12 ounce container whipped topping, divided
  • 1 box instant lemon pudding, prepared according to pie filling directions

Cooking Directions

Preheat oven to 350 degrees. Mix flour, butter and 3/4 cup nuts and press into a 13×9 baking dish. Bake in oven until brown. Cool completely.

In a bowl beat cream cheese and sugar together until light. Add whipped topping just until mixture is a spreadable consistency. Place over crust.

Spread prepared lemon pudding over cream cheese layer and top with remaining whipped topping and chopped nuts. Store in refrigerator.
