I love cooking. Chopping and measuring out ingredients are therapeutic for me. What I don’t like about cooking is washing a ton of dishes. I try to streamline when I cook to avoid a mountain of dishes when I’m done.

That is the beauty of this dish it cooks in a skillet and sauce pan and if you really wanted to you could cook the pasta in a 4 quart pot and after it has drained make the sauce in the same pot so you’ve only cooked in one dish.

I found the recipe I adapted this from at Mommy’s Kitchen. Tina’s a busy mom who posts recipes with tons of flavor that don’t take a lot of time or money.  A lot like me except for the whole mom thing.

The original recipe called for bowtie pasta but I like penne or other tube pastas like rigatoni or ziti with cheese sauces. I also added carrots and onion to increase  the vegetable ratio a bit.
Kielbasa, Penne, and Vegetables in Cheddar Sauce would be great served with yellow squash and onion saute and garlic and herb butter dip biscuits or sour cream biscuits

Kielbasa, Penne, and Vegetables in Cheddar Sauce

  • 8 ounces dried penne
  • 1 pound kielbasa , sliced
  • 1 Tablespoon butter
  • 2 cloves garlic , minced
  • 1/2 medium red onion , sliced
  • 1-2 carrots , diced
  • 6 ounce can mushrooms
  • 1 heaping Tablespoon cornstarch
  • 1 1/2 cups milk
  • 1 cup frozen peas
  • 1 cup shredded Cheddar cheese
  • To taste salt
  • To taste black pepper


  1. Cook penne according to directions on box. Drain and set aside.
  2. Melt butter in a large skillet over moderate heat. Add the kielbasa, mushrooms, onions, garlic, and carrots. Cook until the sausage is browned and carrots are as tender as desired.
  3. Whisk together the milk and cornstarch and pour into the kielbasa and vegetable mixture. Gently stir and cook until thickened slightly.
  4. Stir in the drained pasta, peas, and cheese. Cook for 3-5 minutes or until the cheese has melted and peas have heated through.
