June 2018 Monthly Menu Plan
I had all these grand plans of switching over to once a month grocery shopping in June.
Then life happened. Our backup/overflow refrigerator is acting up again. It’s probably 30 years old so it’s on its last legs and it wasn’t completely unexpected. Our chest freezer is filled to the brim, which is a good thing, and that means no room for a month’s worth of various foods. It also really needs to be defrosted.
Then we had an unexpected car repair issue that was more than anticipated. Nothing super expensive but about twice what we had figured. Since the grocery budget is the easiest to slash we’re making up the difference here.
All of that means June is going to be a mostly pantry challenge meals month. That’s not to say we won’t spend any money on food. All three of the auntlings are here 4 or 5 days a week for three meals a day. The oldest is an 11-year-old boy and if you’ve ever fed a boy that age you know they have hearty appetites.
Since this is a pantry challenge the menu is subject to change depending on what we have leftover and a bunch of other things. Be sure to follow me on Instagram where I will be sharing each night’s meal on Stories.
