Italian Sausage and Bean Soup

Soup is something that everyone in my family loves. I have a tendency to stick to vegetable or potato soups but I’ve been trying to branch out and make other kinds.

This recipe for Italian Sausage and Bean Soup is a new favorite. It takes just a few simple ingredients that I can actually get at my local Aldi making it super frugal. Even if you don’t have an Aldi it’s still pretty cheap. Just as a note this is not a sponsored post. One of my standards for a really budget friendly recipe is if I can get all the ingredients at Aldi.

I’ve made this soup with both Great Nothern and Cannellini beans and we liked the Great Northern beans better in the recipe so use your favorite.

Italian Sausage and Bean Soup

Ingredients

  • 1 Tablespoon olive oil
  • 1 medium onion diced
  • 1 large carrot diced
  • 3 cloves garlic minced
  • 10 ounces Italian Sausage
  • 8 ounces tomato sauce
  • 2-3 15 ounce cans Great Northern or Cannelini beans drained and rinsed
  • 4-6 cups chicken broth
  • 2 teaspoons Italian Seasoning
  • 1 cup dry elbow macaroni
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Heat a large Dutch oven or pot over moderate heat

  2. Drizzle the oil in the pot

  3. Add the onion and carrots and cook for 3-5 minutes or until the onion is translucent and softened

  4. Add the sausage to the pot and break into crumbles with a wooden spoon. Add the garlic to the sausage, onion, and carrots

  5. Cook for 5-6 minutes or until the sausage is browned and cooked through

  6. Next add in the tomato sauce, beans, Italian seasoning, and four cups of chicken broth and bring to a boil

  7. Add the elbow macaroni and cook until tender. Add in the remaining 2 cups of broth if desired

  8. Stir in the Parmesan cheese and serve
