Ham and Macaroni Casserole

One of the unusual aspects of having a food blog is eating food out of season. In order to not be scrambling to get posts up during busy times, you have to work ahead. I actually made this casserole back in June. I started on Christmas posts in July and made a turkey for next month in June as well.

Anyway, this is not ham and macaroni and cheese. I don’t have a baked mac and cheese recipe that I really like. I can never get it quite creamy enough for my crew because the noodles absorb so much of the sauce and I don’t do stringy mac and cheese. Even if that is considered by some to be “grown-up” macaroni and cheese.

We bought an extra ham at Easter when they were on sale for $0.79 a pound for spiral sliced. I couldn’t believe how cheap they were. Fast forward a couple of months and I pulled that sucker out of the freezer and did a big ham dinner. The leftover ham, which wasn’t much, went into this yummy casserole.

Ham and Macaroni Casserole

Servings 8 servings

Ingredients

  • 1 pound elbow macaroni
  • 1/3 cup butter
  • 1/3 cup flour
  • 1 small onion diced
  • 4 cloves minced garlic
  • 5 cups milk
  • 2-3 cups diced ham
  • 8 ounces cheddar or Colby cheese shredded
  • 1 teaspoon dried parsley
  • to taste salt
  • to taste pepper

Instructions

  1. Cook macaroni according to package directions, drain and set aside

  2. preheat oven to 350 degrees

  3. Spray or butter a 3-quart baking dish and set aside

  4. Melt the butter in a deep skillet or pot

  5. Add the onion and cook until softened and translucent

  6. Add the garlic and cook until fragrant

  7. Sprinkle the onion and butter with flour, whisk well, and cook for 2-3 minutes

  8. Slowly whisk in the milk and cook for 3-5 minutes or until thickened and bubbly

  9. Season with salt and pepper and the parsley

  10. Stir in the ham and noodles

  11. Pour into the prepared casserole dish and top with cheese

  12. Bake in preheated oven for 20 minutes or until bubbly and the cheese is golden
