I look forward to this simple fresh strawberry pie every strawberry season. If you use a cookie crust it’s a no-bake dessert which is perfect for hot months. I did use a store-bought crust because this pie is all about the strawberries for me.

Don’t get me wrong, I love a good homemade pie crust but in this case, it’s just something to hold the juicy sweet berries.

If you want to make your own crust I recommend no-roll pie crust or homemade vanilla wafer cookie crumb pie crust.

These gorgeous berries came straight from one of the local farmer’s markets and I think they were the best strawberries I have ever eaten. I may have used more than a pint of berries in the pie because I was working out of a gallon basket and I washed, hulled, and halved strawberries until I got tired.

This is my absolute favorite way to eat strawberries and I’m pretty sure that once you try this pie it will become one of yours as well.

Fresh Strawberry Pie

Ingredients

  • 1 cup sugar
  • 1 cup water
  • 3 Tablespoons strawberry gelatin mix
  • 3 Tablespoons cornstarch
  • 1 pint fresh strawberries washed, hulled and halved
  • 1 single layer pie crust baked and cooled

Instructions

  1. Combine sugar, cornstarch, and dry gelatin mix in a sauce pan. Add water to dry mixture and cook until thickened over medium high heat, stirring constantly to prevent scorching. Set aside and let cool.
  2. Arrange strawberries over pie crust.
  3. When filling is cool, pour over strawberries and chill pie until ready to serve. Serve with whipped cream
