Easy Slow Cooker Italian Vegetable Soup

My family is a soup loving family. We’ll eat soup any day of the year. Doesn’t matter if it’s 15 degrees in January or 95 degrees in July if soup sounds good, we will eat it.

Because of that, I’m always trying new soup recipes. This Easy Slow Cooker Italian Vegetable Soup is a recipe that comes from my kitchen experimentation. Since I’ve played around with the recipe it’s a bit more forgiving in the amounts of some ingredients. Different stores have different sized bags of frozen mixed vegetables available and Aldi only sells 8-ounce cans of tomato sauce. How much of those I add depends on the store I’ve shopped at that week.

Everyone loved this soup which is fabulous. When you have an eleven year, an age group not traditionally known for love of vegetables, ask for seconds you know you have a winner on your hands.

Cooking the noodles in with the soup does mean that as the soup sits it will thicken. That doesn’t bother me. I just add water to leftovers when I reheat. If you would rather not do that you can always cook the noodle separately and some to each bowl.

Easy Slow Cooker Italian Vegetable Soup

  • 24-32 ounces frozen mixed vegetables
  • 1/2 cup minced onion or 2 Tablespoons dried minced onion
  • 4 cloves minced or pressed garlic
  • 2 quarts vegetable broth or stock
  • 15-16 ounces tomato sauce
  • 1 teaspoon dried basil
  • to taste salt
  • to taste pepper
  • 1 1/2 cups orzo or ditalini


  1. Place all ingredients except the orzo or ditalini in a 6-quart or larger slow cooker and stir

  2. Cover and cook on low for 6-8 hours

  3. Add the orzo or ditalini to the slow cooker 30 minutes before serving

  4. Serve hot with bread or rolls
