I am a big fan of repurposing leftovers in any way I can. It is a great way to reduce food waste and save money. I have another potato cakes recipe on the blog that takes quite a few more ingredients and is a great special occasion appetizer or side dish.

Easy mashed potato cakes take four ingredients and about ten minutes to make. They are super versatile and can be served with a variety of main dishes. We’ve also been known to whip up a batch for breakfast with some bacon or sausage and eggs.

Use your favorite mashed potatoes in this recipe. Sour Cream and Chive Mashed Potatoes make excellent mashed potato cakes. Just be sure to use real mashed potatoes and not instant because they will not turn out the same.

Easy Mashed Potato Cakes

Servings 4 people

  • 2 cups cold mashed potatoes
  • 1/4 heaping cup flour
  • 1/4 cup grated onion
  • 2 Tablespoons oil
  • 2 Tablespoons butter


  1. Heat 1 Tablespoon of the oil and butter in a large skillet over moderate heat

  2. Mix together the mashed potatoes, flour, egg, and onion. This will be very thick so it may take some elbow grease.

  3. Scoop out the potatoes using a 1/4 cup and form into patties

  4. Cook half of the patties for 3-5 minutes per side or until golden and heated through

  5. Place on paper towel lined plate to drain

  6. Repeat with the rest of the butter, oil, and potato cakes

  7. Serve warm
