Classic Potato Salad


This is potato salad recipe number three here and that fact that it is the third is fitting. I had to make this three times before I was able to finally get pictures for the blog. The first time I made it we didn’t have any dill pickles and I didn’t know until I got to that step and the second time the bowl fell out of the refrigerator and it all spilled out on to the floor.

I persevered and just in time for your summer barbecues I give you my recipe for classic potato salad.


Classic Potato Salad

A classic mayonnaise based potato salad perfect for summer gatherings and potlucks.

Prep time: 15 minutes

Cook time: 35 minutes

Total time: 50 minutes plus chilling time


  • 2 1/2- 3 pound potatoes, peeled and cubed
  • 1 cup mayonnaise
  • 1 Tablespoon yellow mustard
  • 3/4 cup dill pickle salad cubes or chopped dill pickle
  • 1 medium onion, chopped
  • 3 or 4 hard cooked eggs, chopped
  • To taste salt
  • To taste black pepper

Cooking Directions

Cook potatoes in salted water until just tender. Drain and set aside.

In a large bowl mix together the mayonnaise, mustard, salad cubes, onion, and eggs. Add the drained potatoes and stir gently. Season to taste with salt and pepper.

Chill for several hours before serving.


A couple of food safety reminders: keep this cold. Store it in the fridge until you need it and don’t let it sit out for longer than 30 minutes or so. Better to make someone walk to the fridge for a second helping than risk anyone getting sick.
