I have been looking forward to this month’s Improv Cooking Challenge since the theme was announced last year. If you have read more than a few posts you will know that I love jalapenos and cheese.

It took me all of two minutes to decide what I was making because I’ve had these cheesy jalapeno potato bites on my to-blog list for a couple of years. They are inspired by something my all time favorite fast food restaurant has on their menu from time to time. Due to the fact that closest Del Taco location is in the Atlanta area, which is over 100 miles away, I knew that I needed to come up with a copycat for when the cravings hit.

These take just a handful of ingredients that are easy to find and are pretty simple to make. You need shredded hash browns, I used my homemade frozen hash browns, shredded cheddar cheese, diced pickled jalapeno, seasonings, eggs, and breadcrumbs.

You can bake or fry them depending on what your preference is on cooking technique. The baked ones are a little more fragile than fried and may fall apart.

Cheesy Jalapeno Potato Bites

Ingredients

  • 3 cups shredded hash browns thawed
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 2 Tablespoon diced pickled jalapeno
  • 1 whole egg beaten

For the breading

  • 2 Tablespoons water
  • 1 whole egg
  • 1 cup plain breadcrumbs

Instructions

  1. Combine the potatoes, salt, pepper, cheese, onion powder, garlic powder, and jalapenos.

  2. Pour the egg over the potatoes and mix well

For the breading

  1. Beat the  other egg with 1 tablespoon of water in a shallow dish

  2. Place the breadcrumbs in a shallow dish

Finish the dish

  1. Use a Tablespoon to shape balls of filling

  2. Coat in egg mixture then coat in breadcrumbs

  3. Shallow fry in oil for 4-6 minutes, turning if needed or bake in a preheated 400 degree oven for 15 minutes
