I have a barbecue salad on the blog already and it’s sorely in need of an update. This, however, is a slightly different twist to that recipe.

I did some informal polling on Facebook and Instagram Stories a couple of weeks ago and found out that y’all are looking for main dish salads for this summer. This is the first of several I have planned.

I don’t quite know what it is about crisp greens, meat, vegetables and other toppings that make it just the thing during hot weather. We eat so many salads during the summer I’m surprised we don’t turn into rabbits.

This particular salad has shredded chicken coated in barbecue sauce on top of chopped iceberg lettuce. Plus, onion, tomatoes, a sprinkling of cheese and my “secret” dressing.

This month’s Fantastical Food Fight is all about salads and it couldn’t come at a better time.

Barbecue Chicken Salad was a hit with my family. Well, except with the preschooler who is going through an I hate lettuce stage at the moment. He got chicken, cheese, tomato, and pickles.

Barbecue Chicken Salad

  • 4 cups shredded cooked chicken
  • 1/2 to 1 cup barbecue sauce
  • 1 medium tomato, diced
  • 1 medium red onion, sliced
  • 1 cup shredded Colby Jack cheese
  • 1 head iceberg lettuce, chopped

For the dressing

  • 1/2 cup ranch dressing
  • 1/2 cup barbecue sauce


  1. Toss the chicken with barbecue sauce and set aside

  2. Divide the lettuce, cheese, onion, and tomato among four plates

  3. Top with the chicken and drizzle with the dressing

For the dressing

  1. In a jar or bowl with lid whisk together ranch dressing and barbecue sauce. Use as needed in recipe and refrigerate leftovers
