Barbecue Chicken Nachos from Cookin' Mimi

Welcome to day one of Football Favorite Food week here on Cookin’ Mimi. I love college football season. I’m an SEC girl myself, specifically Auburn University. War Eagle, baby! If you don’t care for football the recipes I am sharing this week would be great to for the big race or a family game night.

Barbecue chicken nachos are one of my favorite things to get at my favorite barbecue joint. We don’t eat out too often so I’ve adapted the recipe for at home cooking. Chicken isn’t the only meat you can use, I also think beef would be wonderful.

Barbecue Chicken Nachos

Mexican Restaurant meets Southern Barbecue Joint.

Prep time: 20 minutes

Cook time: 35 minutes

Total time: 55 minutes

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 3/4 cup barbecue sauce
  • 1 bag tortilla chips
  • 1 jar salsa con queso
  • 1 Tablespoon oil

Cooking Directions

Cook chicken in oil in a skillet over medium heat until done. Shred or cube and add barbecue sauce and heat until bubbly.

Heat the salsa con queso until hot. Place desired amount of tortilla chips on four plates. Top with barbecue sauce covered chicken and salsa con queso and desired toppings.
