Barbecue Beef Flatbread Melts

This recipe for barbecue beef flatbread melts was inspired by the Sonic Hickory Flatmelts. I’ve never actually had one but from the description of them I knew an at home version could be pretty easy to make.

I went to the whole hog route and made my own flatbread wraps and marinated the meat in a hickory marinade but you could buy the flatbread from the store and use a hickory barbecue sauce. The time spent making the actual melts is very short. The meat and onion mixture doesn’t take very long to cook in a skillet and you can have the cheese melted on the bread in a flash.

  • 1 pound sirloin steak , sliced very thin, You could also grab the meat for carne asada. It’s already sliced and works great.
  • 2 Tablespoons oil
  • 2 Tablespoons vinegar
  • 2 Tablespoons soy sauce
  • 2 teaspoons hickory liquid smoke
  • 1 clove garlic ,minced
  • 1 large onion , sliced
  • 1/2 cup barbecue sauce
  • 4 flatbread wraps
  • 1 cup shredded cheddar cheese OR
  • 8 slices cheddar cheese
  • 4 slices bacon crisply cooked.


  1. In a zip top bag or non reactive bowl with a lid mix together the oil, vinegar, soy sauce, liquid smoke, and garlic.
  2. Add in the beef and mix to coat.
  3. Refrigerate at least 4 hours.
  4. When ready to cook drain excess marinade off beef.
  5. Cook beef and onions in a large skillet over moderate heat until beef is browned and onions are tender. That will take around 10 minutes.
  6. Stir in barbecue sauce and cook for 5 minutes longer or until heated through
  7. Place wrap in a dry skillet over medium heat and cook for 45 seconds per side.
  8. Add the cheese to the bread and heat until cheese is melted.
  9. Add the beef and onion mixture and top with bacon.
  10. Repeat for all sandwiches.
