Quesadillas are a favorite of mine. They are super easy to make and you can fill them with so many different things. And I have from refried beans to Cajun seasoned vegetables, even chicken, bacon and ranch dressing for the meat lovers

Bacon Cheeseburger Quesadillas are my newest favorite. I mean who doesn’t love burgers? I kept these pretty simple but you could definitely add diced onion or chopped pickles.

Bacon Cheeseburger Quesadillas

Ingredients

  • 1 1/2 pounds ground beef
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste pepper
  • 6-8 slices cooked bacon, chopped
  • 2 cups shredded cheddar cheese
  • 4 burrito sized flour tortillas

Instructions

  1. Cook the ground beef in a large skillet over moderate heat, breaking the meat into pieces until the meat is browned and cooked through

  2. Season with salt, pepper, and garlic powder

  3. Add the bacon to the ground beef and stir

  4. Heat another skillet over moderate heat and spray with cooking spray or brush with oil

  5. Place a tortilla in the skillet and sprinkle with 1/2 cup cheese

  6. Top with 1/4 of the meat and carefully fold tortilla in half

  7. Cook for two to three minutes per side or until tortilla is brown and crispy and the cheese is melted

  8. Repeat until all quesadillas are done

  9. Serve with your favorite dipping sauce such as ketchup or Ranch dressing
