Last week’s post was super short because Thursday and Friday were busier than I expected and Saturday wasn’t any better. It almost went out with no images because I had it scheduled and realized about an hour and a half before it was supposed to go live that I hadn’t made the graphics.

You may notice that White Chicken Chili is on the menu again. That’s not because we love it so much that we have to eat it every single week. It’s because I still haven’t made it from the first time I had planned on it. The chicken and onions and peppers are in the freezer waiting on me and everything else is either canned or dried so I just have to get my act together.

You may have noticed in my past menu plans that I don’t always have a vegetable listed with the main dish. That’s because a lot of time I just grab the vegetable that sounds the best from the fridge or freezer when I’m cooking. We keep frozen corn, broccoli, and mixed veggies on hand in the freezer and we usually have cabbage or salad fixings in the fridge. We also usually keep cans of corn and green beans in the pantry which are super easy to heat and serve.

I’m testing a couple of new recipes, making a couple of old family favorites, and making a recipe I haven’t made in awhile so I can update images.

Dinner:

Lunch:

  • Ham sandwiches
  • egg salad sandwiches
  • Baked potatoes and a veggie
  • Leftovers

Breakfast:

  • Eggs and toast
  • French toast
  • Peanut Butter toast
