I had really debated on whether or not to post the menu this week because half of it is carry over from last week. We ended up going out for Mexican food last Friday at lunch and the leftovers were dinner that night. That meant the slow cooker Salisbury steak I had planned for supper that night and lunch on Saturday became dinner Saturday and Sunday.

We ended up going out for Mexican food last Friday at lunch and the leftovers were dinner that night. That meant the slow cooker Salisbury steak I had planned for supper that night and lunch on Saturday became dinner Saturday and Sunday.

That bumped everything else back two nights and the spaghetti I cooked on Monday ended up being enough for two nights and so on.

I’m not complaining because I love weeks when that happens because it makes everything so much easier on me. Don’t get me wrong, I love cooking otherwise I wouldn’t have a food blog, but sometimes not having to put a bunch of effort into dinner is a blessing.

The big kids are here this weekend so Saturday and Sunday have a couple of tweaks based on what they will eat. I don’t make separate meals for them but making an extra side dish isn’t a big deal.

Dinner:

  • Beefy Barbecue Beans and baked sweet potatoes for the grown ups and regular baked potatoes for the kids
  • Beefy Barbecue Baked Beans and mashed potatoes
  • Slow Cooker White Chicken Chili, salad, rolls
  • White Chicken Chili over rice, steamed broccoli
  • Sloppy joes, fried potatoes, green beans
  • Slow Cooker Enchilada Casserole, refried beans
  • Tostadas

Lunch:

Lunches are pretty basic this week.

  • hot dogs and mac and cheese
  • leftovers
  • Baked potatoes and salad

Breakfast:

  • Toast and eggs
  • Peanut Butter toast
