Last week was bonkers. I had all sorts of grand plans to post three recipes and all types of other things and then I broke the blog. I won’t bore y’all with the details but it derailed the schedule so I took the week off.

The kidlets are here this weekend which is always a fun time. I’m sure we will spend tonight playing cards and watching movies.

Another thing that is going on is I’ve been doing a lot of learning about how to make Cookin’ Mimi an awesome blog and how to make it better serve you guys. One idea I’ve been mulling over is starting a Facebook community.  The online summit I just finished up gave me the final push to start one instead of just thinking about starting one.

I will still have the Cookin’ Mimi page if all you really want is blog post links with an occasional question or quote. But if you want blog post links and a chance to get see behind the scenes and have a fun sort of getting to know you community you can find that at Cookin’ Mimi’s Kitchen Table.  I’m also planning a few community exclusive projects for later this year so you’ll want to join to take part in that.

Now on to the menu. 

There is one meal that is a carryover from last week. That happens kind of regularly here. I’m a firm believer in you being the boss of your menu plan not it being the boss of you. If something isn’t going to work out freeze the meat for that dish if needed or turn it into another recipe.

Dinner:

  • Spaghetti with choice of meat sauce or Alfredo sauce, salad, and Italian cheese bread
  • Mississippi pork roast, mashed potatoes, and choice of green beans or peas
  • Instant Pot whole chicken and potatoes
  • Egg rolls and vegetable lo mein.
  • Instant Pot barbecue ribs, potato salad, and baked beans
  • Skillet chicken and noodle casserole
  • Leftovers

Lunch:

  • Sandwiches
  • Leftovers
  • Quesadillas

Breakfast:

  • Pancakes
  • Toast and eggs
  • Cereal
