Weekly Menu Week of August 30th

An easy and budget friendly weekly dinner menu for late summer. www.cookingmimi.com
I haven’t done a weekly menu on the blog in quite awhile. I’m still meal planning, most of the time,  but haven’t thought to share what I’ve been cooking.

I am taking advantage of the cooler, meaning under 90 degrees, weather we’ve been having to make a couple of recipes that use the oven.

As usual I’m trying to keep my budget under $25 per person per week for all three meals a day. Breakfast is normally cereal or toast and bacon and lunch is leftovers, sandwiches, or quesadillas.
This week’s menu is a mix of old favorites, new recipes, and a recipe I have made before but haven’t blogged yet.

New recipes are marked with an asterisk  (*)

Tostadas and Mexican rice
Sour Cream Chicken, mashed potatoes, and broccoli
Chili cheese dogs and chips
*Tex-Mex beef and potato casserole, green beans
*Slow cooker citrus and herb chicken,  scalloped or au gratin potatoes, salad
*Cajun salmon patties, baked potatoes, green veggies
Leftovers
Fresh sweet tea to drink.
