Here is this week’s budget friendly meal plan.

As I stated last week I have a goal of $25 per person per week for groceries plus household goods. This is all meals and any snacks as well.

Which is one of the reasons you see so much chicken in my meal plans and on the blog. I can usually find boneless skinless chicken breasts for around  $1.99 per pound and whole chickens for half of that. One of the grocery stores near me had leg quarters for 49 cents per pound so we stocked up.

We also try to eat at least one meatless meal a week. Salad and baked potatoes are a favorite and so are vegetable based soups like my tomato soup when it’s cooler outside. Mexican dishes like tostadas and bean and cheese burritos are frequently on our dinner plates as well.

Southwestern Pinto Bean Soup and fixins  (cheese, sour cream, tortilla chips, hot sauce)
*Potatoes Stroganoff , green veggies
*Creamy Chipotle Chicken Pasta Skillet, salad, garlic bread
*Chicken and Green Chile Quesadillas, refried beans
*Chicken and Stuffing Foil Packets, garlic and herb smashed potatoes, spicy jalapeño creamed corn
Leftovers
Sandwiches or out to eat on grocery shopping day.

Breakfast will be cereal or toast and bacon and lunch is leftovers, sandwiches, or quesadillas.  Boring I know but it works for us. If you are wondering how I have enough food leftover for lunches and a leftovers dinner night. Lunches are usually the one serving of a recipe is left.
